Syrniki or Cottage Cheese Fritters

Syrniki (Сырники) is a perfect breakfast dish that is easy and quick to cook. It's a mix of cottage cheese, eggs, flour and sugar. Easy, right? Russian cuisine is very simple that's why you can cook some Russian dishes even before you go there! You can't really mess it up. Even Jamie Oliver has a recipe of Russian Pancakes, isn't it cool?
Syrniki are sometimes called cottage cheese pancakes or sweet cheese fritters.

Like Colombian Buñuelos, for example. It's one of the most typical breakfast dishes in Russia and other Russian-speaking countries. What you can also cook using absolutely the same ingredients is Lazy dumplings with cottage cheese (ленивые вареники). Russian cuisine is very simple, but creative. You can cook multiple different dishes out of absolutely the same ingredients.
Here is the recipe I use for Syrniki:

Cottage cheese 500g (you can buy it in any Eastern European shop, usually would cost around £2 or 3-4$
3 tbs of flour (+ as much as you need to form balls)
2 tbs of sugar
2 eggs
oil (to fry)
All you need to do is just mix all ingredients together in a bowl. Form something similar to small balls , then smash them a little bit. If they stick to your hand - add more flour. But a small amount, too much flour isn't really good.

Put them on a pan and fry for about 15 minutes. Sometimes I leave them for longer, but don't fry them too much. They should be soft inside and outside (even though because of the flour they might be soft only inside).
Serve syrniki with sour cream (сметана) that you can buy in store or in any Eastern European shop. Also, with jam, honey, fruits, literally anything you want. But the "classic" version would be with sour cream and sugar.
